Three Cheese Slow Cooker Shrimp and Grits

Time for some lightened up comfort food!  Three Cheese Slow Cooker Shrimp and Grits is so easy and it’s not as decadent as it sounds, I promise! A few secret ingredients makes this a creamy, cheesy and easy dinner.  We’ve been known to eat three cheese slow cooker shrimp and grits for breakfast and lunch around our house.  It’s also a fabulous brunch dish paired with a Bloody Mary!

Shrimp and Grits is a very traditional Southern dish; the first time I had it was when I ordered it at Slightly North of Broad, also known as SNOB in Charleston, South Carolina back in 1999. I fell in love!  My slow cooker shrimp and grits is a lighter than some of the other versions that use lots and lots of cheese and way too much heavy cream.

I decided to try making it in my slow cooker, and the slow cooker shrimp and grits came out AMAZING .

I don’t think this dish is going to last until dinner time. My skavengers tasters are already chowing down on it!

I used the quick cooking type of grits and I have no idea how long it would take in a slow cooker if you used the slower cooking ones. I’ll try that and update this post soon!

Three Cheese Slow Cooker Shrimp and Grits is great with Extra Sharp Cheese

I like to cook with very high quality, very sharp cheddar cheese because it has so much flavor, a little of it goes a long way!  That can save you a few calories, which means it’s perfectly okay to have seconds.

I sometimes use my Kitchenaid Mixer to shred cheese, rather than buying the pre-shredded. It just seems fresher, but I promise either type will work.  A Kitchenaid Mixer is definitely a must-have for my kitchen, even though I rarely bake.  I use it for everything from shredded cheese to mashed potatoes to fluffy scrambled eggs!

I have three slow cookers and use them all! Typically on the weekends I’ll be busy making chicken or seafood stock in one of them and a meal to serve later in the the week in the other two.  Here is some great deals on slow cookers and Crock-Pots on Amazon.  They are  basically the same thing but the Crock-Pot is a brand name.

Three Cheese Slow Cooker Shrimp and Grits

I’m trying to keep this Shrimp and Grits recipe reasonably light by using chicken broth instead of milk or cream and Light Sharp Cheddar Cheese; you won’t need as much cheese if you use a type that has a really strong flavor.  (I did sneak in a little Fat Free Half and Half toward the end when I was adding the shrimp.)

Slow Cooker Three Cheese Shrimp and Grits


  • 6 Cups Chicken Broth or Stock
  • 1 1/2 Cups Quick Cooking Grits
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 1 Teaspoon Dried Thyme or 2 Teaspoons Fresh Chopped Thyme
  • Salt and Pepper to Taste
  • 1 Cup Light Sharp Cheddar Cheese
  • 4 Ounces Light Cream Cheese
  • 1/2 Cup Grated Parmesan, Romano or Asiago Cheese. (Reserve a bit for garnish)
  • 1/2 Teaspoon Hot Sauce (optional)
  • 2 Pounds Raw Shrimp
  • Scallions or Chives and Extra Cheese for garnish


  • Combine Chicken Broth and Grits in Slow Cooker
  • Add all other ingredients except Shrimp and Green Onions
  • Cook on low for 3 Hours.
  • Add Shrimp and 1/2 cup cream or Fat Free Half and Half if desired. (If grits have aborbed all the liquid, add some more broth or some milk. It will depend on your slow cooker. The above measurements worked perfectly in my Hamilton Beach Model.)
  • Cook for 30 minutes to One Hour, or until shrimp are done.
  • Garnish with Extra Cheese
  • Garnish with Green Onions or Chives and Cheese.
